Pumpkin Scones with Pumpkin Spice Glaze
Scones3 cups of flour (start with 2 cups and add as much as needed to make a dough...you may only need 2 cups if using store bought pumpkin)
1/2 cup sugar
1/2 tsp salt
1 tsp pumpkin pie spice (or 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice, and 1/4 tsp ground cloves)
6 tbsp cold butter
1/2 cup pumpkin puree (or canned pumpkin)
1 egg
1/4 cup milk
Glaze
1 cup powdered sugar
2 tbsp whipping cream (you can use milk...try for whole milk...you want the creaminess of the cream or full fat milk)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp pumpkin pie spice
*I need to apologize in advance for the lack of pictures. I completely got caught up making these and forgot to snap a pic until about 1/2 way through the process. Sorry. Won't happen again. Promise. Ok, in all honesty, it might. But I'll try not to let it happen again. *
Add the flour, sugar, salt, spices, and butter into a food processor or blender (you could do this by hand with a pastry cutter...but I'm way too lazy for that.). Blend just until it becomes crumbly. (sorry no pic)
In another bowl add the pumpkin, egg and milk. Mix until blended. This you can do with a whisk or mixer...it's easy.
Add the dry ingredients into the wet ingredients and mix. As you can see, my dough was super wet when I only added 2 cups of flour. I added about 1/4 cup until it became dry enough to turn out and shape (think biscuit dough). I ended up adding an extra cup of flour.
Much better...see :) Flatten the dough into a rectangle of sorts, about 1" thick.
Take a pizza cutter and cut into triangles (the amount of triangles may vary depending on the thickness of your dough).
Bake the scones at 425 F for about 15 min or until golden brown.
While the scones are baking, let's get started on the glaze. Add the powdered sugar, whipping cream, and spices in a bowl. Whisk until everything is blended. Simple!
Once the scones are done, while still warm, pour some of the glaze over each scone. How much glaze is purely up to you...if it were up to me, I'd probably dunk the whole scone into the icing! But, alas, the rest of the family doesn't want to do that (such party poopers).
Wait for the glaze to cool (it will harden) if you can. Enjoy!
