Bacon Cheddar Scones

I seem to be on a scone kick.  Does anyone else ever do that?  Get on a *insert food* kick and then eat it for days on end?  I do.  Like the pot roast I posted the other day.  Like the scones from yesterday and today.  And today's scones are seriously to die for...if you like scones and bacon and cheese.  And really, who doesn't?  Oh, and easy.  If you like easy homemade...these are definitely for you.

Toss all the ingredients in a bowl, mix, cut, and plop in an oven.  It's that simple.  But it will taste like you spent hours in the oven.  My suggestion...double the recipe.  The first batch will be gone before you can let the family know they are done baking...it will be good to have a second batch to feed them...just a thought :)

Bacon Cheddar Scones

2 cups flour
1 tsp salt
1 tbsp baking powder
2 tbsp sugar
4 tbsp cold butter
1 cup cheddar cheese, shredded
chives (I didn't measure them...just chopped a handful and tossed in...probably 1-2 tbsp)
bacon, cooked and chopped/crumbled (I added about 6 slices...more is fine too)
1 cup heavy whipping cream (milk will work too)

Mix the flour, salt, baking powder, sugar and butter until crumbly.  Add cheese, bacon, and chives and mix well.  Add the cream until a dough forms.  Pat into a round disk 1" thick and cut into triangles.  Bake at 425F for about 15 minutes until golden brown.

Cook your bacon.  I use the oven, but a skillet works as well.  You want it cooked well enough to crumble.
While the bacon is cooking, go ahead and gather up the rest of the ingredients and a bowl to mix.
 
 

Whisk the flour, salt, sugar, and baking powder together.  Add the cold butter and with a fork or pastry cutter, mix until crumbs form.
 
You can see the small pieces of butter still in the mix.  That's ok. 
 
Mix in the bacon, cheese, and chives.
 
Pour in the cream and mix until there are no crumbs in the bottom. If it doesn't become one solid ball of dough, add more cream or milk, 1 tbsp at a time. You don't want it super wet, just wet enough to combine all the ingredients.
Pat the dough into a round disk about 1" thick.  Use a pizza cutter and cut into triangles.
 
 
Place on a non-stick pan and bake at 425F for about 15 min, or until golden brown.
 
 
These are so good.  They are very flavorful and could be considered a complete breakfast on the go...bacon, cheese, scone...not much else is needed!  They take about 10 min to prepare (not including the time to cook the bacon) and then 15 to bake.  Then off you go!
