Chocolate Covered Peanut Butter Balls

I have to give credit for these yummy peanut butter balls to my dear friend...she introduced them to me when she made them for a cookie exchange and everyone scarfed them down!  They were so delicious!

Chocolate Covered Peanut Butter Balls

1 1/2 cups peanut butter
1 cup butter (2 sticks)
4 cups powdered sugar
1 1/3 cups graham cracker crumbs
2 cups chocolate chips
1 tbsp shortening
 
Add the peanut butter, butter, powdered sugar, and graham cracker crumbs into a bowl and mix until everything is well combined.
 
I used a tablespoon and scooped out some of the peanut butter mixture.  Roll it into a ball.  This size made about 50 balls.  Place the balls into the fridge while you prepare the chocolate (about 1/2hr is best).
 
Using the double boiler method (a larger pot with boiling water on bottom...the smaller pot on top with the chocolate), melt the chocolate chips and shortening until smooth.
 
Dip each ball into the chocolate until completely covered (or if you get lazy and are starting to run out of chocolate like me, just dip 1/2 the ball).  Place them back into the fridge to harden.
 
And there ya go!  Super easy and quick!  And the recipe makes quite a few so you can take them to cookie exchanges, drizzle with red or pink candy coating for Valentine's Day treats, or any other fiesta with lots of people.  Enjoy!
