Biscuit Buffet

Canned biscuits...not exactly homemade, but let's not fool one another...most times I do not make my own biscuits.  I would, honest, except that I find Grands brand biscuits on sale for 10/$10 or this last purchase, $0.75.  For the full size can, not that small one.  For the real GRANDS biscuits, not just plain 'ole little biscuits.  And, yes, there are days when I don't want to bake...so I buy them.  The problem is that I buy too many. Shocker, right (remember the pork picnic roasts)?!  We don't eat them fast enough and you can't freeze the cans (although I am currently opening a can and freezing to experiment as to whether I can take them out, thaw them and bake like other frozen biscuits...I'll let you know).  So, what can you do with lots of canned biscuits?? 

Have a buffet...of sorts.  Ok, there's only 2 items on my buffet but both biscuit and buffet started with a "b" and I liked that...

First is to make mini pizza biscuits.  It's quick, easy, and the kiddos love it!  Second, and my personal favorite, is to make mini cinnamon rolls  Seriously, these are amazing!  And just as easy!

Mini Pizza Biscuits

1 can of biscuits
Pizza sauce (or pasta sauce, or bbq sauce...I use arribatta sauce with the pepperoni and bbq with the turkey)
Mozzarella
Your choice of toppings

Gather up whatever ingredients you are planning on using.  I made 2 kinds of pizza...pepperoni and bbq turkey (like bbq chicken...only w/ leftover turkey from Thanksgiving).
 
Take each biscuit, flatten with your hand and add the toppings.  That's it!  Easy right!  Took 1/2 a second, no?!  Pop 'em in the oven at 350F for about 8-10 min or until the biscuits are golden brown.
 
That's it!  Feed them to the minions kids.  Enjoy!
 
And now, to my favorite use for canned biscuits...cinnamon rolls!!!
 

Mini Cinnamon Roll Biscuits

1 can of biscuits
1 cup brown sugar (or 1 cup sugar and 1tbsp molasses to make your own)
1/4 cup melted butter
Cinnamon
1/2 cup powdered sugar
2tbsp heavy whipping cream
1tsp vanilla
 
 

 
First, let's make the filling for the cinnamon rolls.  This is what turns that plain biscuit into pure heavenly deliciousness.  Melt your butter over low heat until just melted.  I make my own brown sugar.  Mostly because I'm cheap, but it really does have a better flavor.  Add 1tbsp of molasses to 1 cup of white sugar and mix with a fork until it looks like brown sugar.  That's it.  Homemade brown sugar!  Easy Peasy!
 
 

Add cinnamon to the brown sugar.  I don't measure it, but it was probably about 1 1/2 tsp.  Pour in enough butter to make a paste.  You may not use all the butter, that's ok...put it back in the fridge for later.
 
Now, prep the biscuits by rolling them out so they are in a long oval shape.
 
 

Take a spoonful of the brown sugar mixture and spread it onto the biscuit, leaving a bit at the top plain.  Roll up from one end, making sure it's a tight roll.  Press the end into the biscuit so it seals.
 
 

Slice the roll into 3 sections and place into a pan.  See, mini cinnamon rolls (please ignore that sexy foot...as you can see, I'm a non-editing food pic taker...oops!).  Bake at 350 for about 15 min or until the cinnamon rolls are golden brown.
 
 

While the rolls are baking, let's make the icing.  Take your powdered sugar and add the heavy whipping cream.  Whisk until it looks like icing.  Now, most recipes I've seen stop here.  And that's ok.  It's ok icing.  But to me, it tastes like powdered sugar...not the icing we are used to getting on cinnamon rolls.  The trick to making it taste perfect??  A tsp of pure vanilla!!!  Seriously, add it.  Right now, I'll wait............
Got it.  Great!  NOW, taste it!  Seriously, makes the world of difference doesn't it!?  I KNOW!!  I could simply eat the icing at this point!
 
Your cinnamon rolls should be done about now.  Take them out of the oven and while gawking over how yummy they look, pour that icing over the top!  You want it to melt into pure gooey-ness!  Aren't they gorgeous?!  Wait til you taste them!  And all from canned biscuits!!
 
Try to make sure you get a plate out of the cupboard when you get the fork (although if you just get a fork and start to dig in, I won't tell!).  Best eaten while still warm from the oven...like any of us could actually wait for them to cool, right?
